I am unsure of how to calculate the necessary damping coefficient. Any help would be greatly appreciated.

Reference Dixon's Shock Absorber Handbook. I would say as a general rule of thumb, you want you roll and pitch modes to be critically damped. In ride modes I would suggest somewhere between 50 and 80 percent of critical.
