I have seen D Sports Racers (1000cc sport bike engines in a La Mans style car) run a stock carburetor setup. Before that I was always told that carburetors would not work in theses cars because the lateral g-forces would upset the floats in the carburetor.

There is a lot of discussion on the board on setup of fuel injection systems, have a look around and see what you find.
To answer your question, yes, you should be able to setup fuel injection on a (formerly)carbureted engine. It's just a lot easier to do on an engine that was already fuel injected because the required sensors (or at least thier locations) are already there for you to use.
Carburetion should probably be reserved for the situation where you don't have the time/money/experience to setup a proper electronic fuel injection/ignition system.

We've retrofitted a few of our older cars (R6 and FZR engines) with the original carbs in order to reuse some of the FI parts, and have never had trouble with them when using them for practice.
But as most everyone is saying, if you have the chance to use EFI, go for it.
Good luck!

We ran a 2001 R6 with an ECU from Performance Electronics. If you have any questions feel free to shoot me a PM or email.

we also run a 2001 r6 motor on a PE ECU converted to fuel injection. Its not that hard, you just have to make your own fuel rail and put injector bosses on your intake runners. Not to mention make an intake for the thing too, but hopefully you'll be doing that already. If you get stuck, give a shout on the boards and I'm sure we can help you out.
