Data analysis using matlab

Hello everyone
I am in vit university vellore FSAE team, last year we participated in FSG. we just started thinking about using matlab to analysis data.
So I want to know how we can use matlab to analysis data in csv format??what is exact procedure followed??
Currently we r using gems and zoomcenter to analysis data
